About Me

Dawn Ainsworth has been awarded MSc with Distinction in Nutrition and Food Sciences.

 

The MSc course gave me the opportunity to research some of the many exciting developments in nutritional understanding.

​

Recent years have seen an increased awareness of the health benefits attributable to high quality nutrition. Within western society there is growing interest into the use of food as a therapeutic approach for the prevention of, and treatment for, certain metabolic diseases like Type 2 Diabetes and cardiovascular disease.

​

The rise in prevalence of auto-immune disorders like Coeliac Disease raises many questions about the role of the modern western diet.

​

A member of my family was diagnosed Coeliac at the age of 17, and 13 years later they still find it challenging to live gluten-free. I'm interested to learn about other Coeliacs' experiences in order to fully understand the challenges faced on a daily basis.
